A Week of Easy Dinner Ideas πŸ₯“πŸŽπŸ—

Hey, friend!

Good morning, and happy Sunday! This week included beautiful fall days, a good book, and the Homecoming dance. You can find all of the highlights from the past few days, along with each of our dinners, in today’s roundup of Our Week in Meals.

Stuck in a rut with your own dinners? Here are some fresh ideas from the blog:

Chicken Pot Pie Soup

Everything you love about chicken pot pie, minus the crust! My kids love their bowls with biscuits to soak up that creamy broth. I love that rotisserie chicken does most of the work, so dinner's ready in about an hour!

Shells and Cheese

Beats the boxed kind by a mile, and it only takes about 30 minutes on the stovetop! Three cheeses go into the sauce, and buttery toasted breadcrumbs on top give you that baked mac and cheese crunch without ever turning on the oven.

Appalachian Beans and Greens

Humble Southern cooking at its best! Creamy white beans and hearty greens simmer together in seasoned broth with plenty of smoky bacon, and canned beans get the whole pot on the table in about 30 minutes. All it needs is a wedge of cornbread!

Ground Beef Pot Pie

The filling is beef, mushrooms, carrots, and peas in a rich gravy, and the topping is cheddar drop biscuits that bake right on top. One skillet, and dinner is on the table in about an hour!

French Onion Chicken Casserole

Sweet caramelized onions and tender shredded chicken go under toasted baguette and melted Gruyere, all in one skillet. Start with a rotisserie chicken and it's on the table in about 40 minutes!

Fennel and Apple Salad

Shaved fennel, tart apple, and crisp cabbage tossed in a creamy apple cider dressing, ready in about 15 minutes with no cooking at all. It's the cool, crunchy slaw that cuts right through a rich pork roast or a plate of pulled pork!

22 Best Cranberry Recipes

Cranberries are the flavor of the holiday season, and they're much more versatile than one dish of sauce at Thanksgiving! Here I've pulled together a convenient collection of our favorite cranberry recipes, including sides, breakfasts, homemade gifts, and desserts.

And since it's Sunday, it's time for Our Week in Meals! You can check out all of the highlights from our week and hopefully find some new dinner inspiration for your own meal plan. The full details are on the blog today:
