Chili Nights: 6 Chilis that Skip the Beef

Hey there,

I could make chili every week this season and not repeat myself. Here's the proof!

Last time I shared some of our favorite beef chilis. Today, I’m giving you six options that go in a different direction.

Crockpot White Chicken Chili

Creamy, mild, and the slow cooker handles all of it. This is the one my readers make more than any other chili on my site!

Easy Pork Chili

Pork gives you a milder, slightly sweeter pot than beef does. It's also the quickest one here at about fifty minutes.

Green Chicken Chili

Green chiles instead of tomatoes, which makes for a brighter, tangier bowl. A real change of pace from the red pot.

Pumpkin Chili

Don't let the pumpkin put you off (there’s ground turkey in there, too!). It's the one I pull out every October.

Ground Turkey Chili

Same pot, same seasonings, just a lighter pot. Good for the nights you want chili without feeling like you need a nap after.

Crock Pot Buffalo Chicken Chili

If buffalo chicken dip is the first thing to disappear at your house, this is that flavor in a bowl. It's got some heat to it.

Kitchen Tip: A white chili won't thicken the way a red one does, since there's no tomato in it doing that work. If you want yours closer to stew than soup, mash some of the beans against the side of the pot before serving and stir them back in.

If none of these is quite right, my 20 Best Chili Recipes collection has all of my favorite chili recipes in one place.

Next up: the pan of cornbread that goes alongside all of it!
