A Week of Easy Dinner Ideas 🐟πŸ₯©πŸ₯¦

Hey, friend!

Good morning, and happy Sunday! This week included Memorial Day, family time, and the start of summer break. You can find all of the highlights from the past few days, along with each of our dinners, in today’s roundup of Our Week in Meals.

Stuck in a rut with your own dinners? Here are some fresh ideas from the blog:

Easy BBQ Baked Beans

Turn a few cans of beans into the smoky, saucy side dish everyone hovers over at a cookout! Bacon, bell pepper, and a sweet-tangy BBQ sauce do all the work, and there's no overnight soak required.

Dump-and-Bake Cream of Mushroom Chicken

With just 5 minutes of prep and 5 simple ingredients, this is an easy weeknight dinner the whole family will love. Tender chicken bakes in a rich, creamy sauce that's perfect spooned over buttered noodles, rice, or mashed potatoes.

Chick-Fil-A Cobb Salad

A copycat Chick-Fil-A Cobb salad loaded with crispy chicken nuggets, smoky bacon, hard-boiled eggs, roasted corn, and shredded cheddar and Monterey Jack cheeses, all brought together with the famous avocado lime ranch dressing. It's the entree salad that actually fills you up, and you can have it on the table in about 30 minutes!

Dump-and-Bake Bratwurst and Sauerkraut with Potatoes

Braised sausage, sauerkraut, and baby potatoes in one dish with a splash of German beer. Four ingredients, about 10 minutes of prep, and a cozy Oktoberfest-inspired dinner ready when the oven timer goes off!

Golden Turmeric Chicken

The simple marinade of olive oil, lemon, honey, Dijon, garlic, and turmeric gives you tender, juicy meat with a vibrant golden color, whether you cook it on the grill, in a skillet, or in the oven.

Dump-and-Bake BBQ Pulled Pork Casserole

With just 5 minutes of prep, this casserole turns leftover or store-bought pulled pork into an easy one-dish dinner. The rice, carrots, and cheese bake right in the pan; no pre-cooking required!

Shrimp with Ravioli

A quick skillet dinner with tender shrimp, fresh ravioli, and a pesto-tomato pan sauce. This recipe came from my mom, a master at pulling dinner together from whatever's on hand, and it's been a family favorite ever since!

Baked Pancakes with Pancake Mix

With a box of pancake mix and about 5 minutes of prep, you can pull a whole pan of fluffy buttermilk pancakes out of the oven! No flipping and no standing over the stove.

Southern Seafood Dinners

The South has the Gulf, the Lowcountry, the Chesapeake, and a fishing culture that goes back generations, and you can taste all of it in dishes like gumbo, fried catfish, and shrimp and grits.

This collection brings together the Southern seafood dinners I make most often. You'll find slow-simmered Lowcountry classics, Friday-night fish fry favorites, and quick shrimp and salmon skillets for the nights you need supper on the table in under 30 minutes.

And since it's Sunday, it's time for Our Week in Meals! You can check out all of the highlights from our week and hopefully find some new dinner inspiration for your own meal plan. The full details are on the blog today:

Hey, friend. Most people pack the slow cooker away around Memorial Day and pull it back out when soup season hits...but I'd argue June is when it earns its keep! The kitchen stays cool, dinner is essentially done by lunchtime, and everybody is happy at the table. THE CLASSIC Slow Cooker Pulled Pork A pork shoulder, a simple rub, and eight hours in the slow cooker. The kind of pulled pork that...
