8 Slow Cooker Dinners With Leftovers Built In

Hey, friend!

I love a big Sunday dinner, but I don't love spending the whole day on it!

Sunday supper used to mean an afternoon in the kitchen (which is fine when time allows). Other weeks, we're on the go and need a meal that practically cooks itself. These eight go in the slow cooker in the morning, and by the time everybody's hungry there's a full meal waiting. Roasts, chops, chicken and dumplings -- all of it hands-off -- and nearly every one makes enough for leftovers the next day.

Slow Cooker Pot Roast with Coke

This is the Sunday roast my neighbor taught me, and the Coke does something to a chuck roast I can't explain. It goes in early and falls apart on the fork by dinner!

Crock Pot Chicken and Dumplings

Old-fashioned chicken and dumplings done in the slow cooker, which is the easiest way to make them!

Slow Cooker Pork Chops

Pork chops in a slow cooker sound risky until you try them. This reader recipe come out tender instead of dry, with the gravy already made.

Mississippi Pork Roast

If you've only ever made the beef version, this pork is worth a try. Same idea, feeds a crowd, and you can do it in the oven or the crock pot.

Crock Pot Chicken and Potatoes

The potatoes cook right along with the chicken, so there's nothing else to make. That's about as close to a whole Sunday dinner in one pot as you'll get!

Slow Cooker Pulled Pork

This is what I make when there's a houseful. It cooks low and slow all day, and there's always plenty left for sandwiches or nachos during the week.

Crockpot Chicken and Stuffing

Chicken and stuffing tastes like Thanksgiving, but we don't have to wait for November. This one's about as cozy as supper gets!

Beef Burgundy

When I want Sunday dinner to feel like a bit of an occasion, this is where I go. It's rich and hearty, but the slow cooker does the hard part.

Helpful Tip: try not to lift the lid while it cooks. Every peek lets the heat out and adds time on the back end, so you'll get a better supper leaving it alone.

If you want something green on the table, Slow Cooker Green Beans can go in a second pot and cook right alongside any of these.

And if you want to get even further ahead, my Crock Pot Freezer Meals are assembled and frozen ahead of time, so there's nothing to do but dump one in and turn it on.

The crock pot is earning its keep around here again! Pick one and let it work for you too.

Enjoy!
