8 Soups That Are The Whole Dinner

Hey, friend!

The mornings finally turned cool here, and that's all it takes: the soup pot comes out and it pretty much stays out until spring! These eight are a good start, and every one of them is dinner all by itself.

Crock Pot Chicken Stew

If tomorrow already looks busy, start here. Everything goes in the slow cooker in the morning and you don't have to think about supper again.

Ham and Bean Soup

No soaking, no planning ahead. Just ham, beans, and about ninety minutes between you and a warm bowl.

Meatball Tortellini Soup

When I need dinner in a hurry, this is where I go. The meatballs and tortellini do the work, and it's on the table in no time.

Slow Cooker Cabbage Soup

Start it in the morning and there's plenty by dinner, with enough left over that you're not cooking again tomorrow.

Creamy Chicken & Wild Rice Soup

Grab a rotisserie chicken and you're forty-five minutes from a thick, creamy bowl. The roux does all the heavy lifting here.

Virginia Brunswick Stew

Old Virginia cooking, and what I want when I need something that really eats like a meal.

Dutch Oven Beef Stew

Everything happens in one pot, which means one thing to wash. Most of that time is just the stew doing its own work on the stove.

15 Bean Soup with Sausage

A bag of bean mix and some smoked sausage is nearly the whole list. Let it go low and slow while you get on with your day.

Most of these freeze well, so it's worth making the full pot even if you're only feeding two or three. The creamy ones are the exception. Dairy tends to separate when it thaws, so if you want to get ahead on those, freeze the base before the cream goes in and finish it after.

That's the start of soup season around here. Plenty more still simmering!
