Chili Nights: 7 Dinners Built on Chili or Cornbread

Hey there!

You’ve made the chili and you’ve served the pan of cornbread. Now for the fun part!

Today I’m sharing seven dinners that prove chili and cornbread are so much more versatile than you might think. There’s even a salad that might raise some eyebrows.

Tamale Pie

Beef and cornbread in one skillet! A zesty ground beef filling under a cheesy Jiffy cornbread crust, in the oven after about fifteen minutes of work.

Ground Beef Cornbread Casserole

Seasoned beef on the bottom, cornbread on top. There's an option for a from-scratch cornbread topping if you'd rather skip the box.

Jiffy Cornbread Taco Bake

Taco meat under a cornbread topping made with creamed corn, green chiles, and jalapeños. It's the boldest of the cornbread bakes.

Chicken Cornbread Casserole

Creamy chicken under a sweet cornbread top. A rotisserie chicken and a couple of pantry cans do most of the work!

Pulled Pork Casserole

Saucy pulled pork with peppers and corn, tucked under a cheesy cornbread crust. Proof a cornbread lid works with more than just beef!

Frito Pie

A chili cheese casserole with crunchy corn chips over the top, all in one skillet. Fifteen minutes of prep and the oven handles the rest.

Cornbread Salad

There it is! 👀Cornbread, bacon, cheese, beans, and tomatoes layered with a creamy dressing. It sounds strange until you've had it!

Most of these pour the cornbread batter straight over the filling, so the topping bakes into whatever's underneath it. Spread it all the way to the edges so the filling doesn’t bubble over the top.

That's chili night, start to finish. The pot, the pan, and everywhere else the two of them end up. And if the cornbread on any of these comes out of a Jiffy box, nobody will know and I'm certainly not going to tell them!
